2 cups cooked corn kernels
2/3 cup heavy cream
1/3 cup yellow cornmeal
2/3 cup all purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/8 teaspoon black pepper
3 large eggs, lightly beaten
1/3 cup unsalted butter, melted
8 ounces (or more) Northern Keta Wild Alaskan Salmon Caviar
Crème fraiche or 1 container sour cream
1. Puree the corn and cream in a blender and transfer to a bowl.
2. Stir in cornmeal, flour, baking powder, salt and pepper.
3. Mix in the eggs and melted butter to make a batter.
4. Place a little oil in a nonstick skillet over medium heat.
5. Add batter to the skillet in heaping tablespoons.
6. Cook until corn blinis are golden brown - about one minute
per side.
7. Drain the blinis on paper towels.
8. Serve topped with 1 teaspoon crème fraiche or sour cream and some Northern Keta Wild Alaskan Salmon Caviar.
